Serves

3 - 4

Ingredients

  • 250g frozen mango or fresh mango flesh
  • 250g Greek yoghurt
  • 1 tablespoon honey

Optional:

  • 1 teaspoon lime juice (added to mixture)
  • Fresh mango, diced, or passionfruit, to serve

Method

  1. Place frozen fruit, yoghurt and honey in a food processor. Add lime juice if desired. Initially pulse using short bursts until the ingredients to come together. Then process until smooth.

  2. Spoon the mixture into a serving dish or individual ramekins. Cover and freeze for approximately three hours until almost frozen.

  3. If desired, top with fresh mango or passionfruit.

Tips

  • If you are finding it difficult to blend, wait a littler for the mango to soften slightly. Alternatively, add 1-2 tablespoons of milk to bring the mixture together.
  • If the mixture is too firm once frozen, leave out of the freezer until it reaches a desired consistency before serving.
  • If you prefer, replace frozen mango with other frozen fruits such as strawberries, raspberries or mixed berries.
  • Recipe can be doubled easily.
  • If dairy intolerant, swap yoghurt for coconut or other dairy-free varieties.
