Hearty chicken and vegetable stew

A delicious, easy and healthy winter warmer

Crafted by our dietitian, this hearty stew brings together tender chicken, nourshing vegetables and a rich, flavourful base for a truly satisfying winter meal. It’s nourishing, comforting and made with everyday wholefood ingredients to support balanced eating at home. Serving four, it’s a cosy, warming option for weeknights or a simple weekend cook‑up.

Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2-3 medium potatoes, chopped
  • 600g chicken breast, diced
  • 2 cups chicken stock (reduced salt)
  • 1/4 cup tomato paste (reduced salt)

Method

  1. Heat oil in a large pot or saucepan on medium heat. Cook onion, carrot and celery, for 5-10 minutes, until softened.
  2. Add diced chicken and cook until lightly browned, about 5 minutes.
  3. Stir in tomato paste and cook for 1-2 minutes. Add chicken stock, and season with herbs and spices as you wish.
  4. Add the potatoes, stir to combine. Bring to a gentle boil, then reduce heat to low.
  5. Cover and simmer for about 20–25 minutes, stirring occasionally, until potatoes are tender and chicken is cooked through.
  6. Serve into bowls, and enjoy on its own or with crusty bread.

 

Notes

  • If you wish to add additional veggies, others that work well in this dish include button mushrooms, pumpkin, frozen peas and capsicum. These can be added at Step 1.
  • Use sweet potato in place of white potato if you prefer.
  • Add in a tin of crushed tomatoes to make this dish extra punchy, or substitute tomato paste for a dash of light coconut milk or thickened cream, to make this dish creamier.
  • Add herbs and spices as desired, such as pepper, oregano, rosemary and parsley.
  • Freeze leftovers in single-serve portions for ready-to-go healthy meals as you need.
