Marji and Joan’s friendship began online, but quickly grew into a genuine connection built on shared interests, laughter and the simple joys of everyday life. One of Joan’s go‑to favourites is a wonderfully simple pickling recipe she’s been making for years. It’s easy, tasty and perfect for snacking - the kind of homemade treat that fits right into the warm, practical cooking style she and Marji often chat about.
Ingredients
- 3 large or long cucumbers, sliced
- 1 onion, sliced
- 1½ cups sugar
- 1 dessert spoon salt
- ½ cup white vinegar
- 1 teaspoon mustard seeds
- ½ teaspoon turmeric
Method
- Place cucumber and onions in a container. Sprinkle salt over them.
- Cover with ice for three hours.
- Drain, then place in pot with sugar, mustard seeds, turmeric and vinegar. Boil for 15 mins.
- Put in jars in brine and refrigerate.
